What is gimmari?
Gimmari (김말이) is a Korean fried snack made of glass noodles rolled in seaweed. Our menu lists it as crispy fried seaweed rolls stuffed with chewy glass noodles. It is listed at $4.90 as a side and is also part of both of our group sets.
In Maangchi's gimmari recipe, cooked glass noodles (dangmyeon) are rolled up in gim, the dried seaweed sheet. The rolls are then coated in batter and deep-fried. That recipe shows how the dish is generally made at home. Our menu listing doesn't name the noodle type or the batter, or say how ours is prepared. If you have an allergy or follow a specific diet, please confirm the details with our staff when you order.
Gimmari and gimbap
Both names start with gim (김), the seaweed sheet that wraps each roll. In Maangchi's gimbap recipe, seasoned rice and fillings such as vegetables and egg are rolled in gim and sliced into rounds, with no frying. Gimmari has glass noodles where gimbap has rice. It also goes into the fryer, so it eats like a crunchy snack.

The savory pair: tots and gimmari
Tater tots are the familiar pick, crunchy outside and fluffy inside. They're also the side our combo listings pair with each burger. Gimmari brings the same crunch from a Korean snack shop. You bite through a crisp shell into a chewy noodle center. It's the gimmari of bunsik shops, the casual Korean spots known for snacks like tteokbokki and gimbap.
Both go well with saucy burgers like the Bulgogi Burger or the Seoul Sweet Heat Chicken Burger, where something crunchy gives you a break from the sauce.
The sweet one: ggultteok
Ggultteok are bite-size rice cakes in a honey glaze. They're soft, chewy and sweet, more like a small dessert than a fry. That makes them a good partner for the Buldak Burger or the Spicy Galbi-jjim Burger, where a sweet bite between spicy ones gives your palate a pause. Both of our group sets, Perfect Match and No Diet Today, include ggultteok and gimmari, so a group gets one sweet side and one savory side. If you avoid honey, keep the glaze in mind.
The creamy one: kimchi slaw
Our house-made kimchi corn slaw is creamy and crunchy with a little spice. It's the side for burgers that don't already have a sharp topping, like the Bulgogi or Deluxe Burger. Our kimchi guide explains how it compares with pickles and with the kimchi on our Kimchi Bulgogi Burger.
The menu also lists Spicy Potato Chips with a sweet honey seasoning and red flakes, a House Salad with buttermilk ranch, and Crazy Spicy Kimchi for serious heat. Ordering for a group? Our sets and pickup guide shows how the sides fit into the group sets.
