Three ways to add sharpness and crunch

A sharp, crunchy topping resets your palate between bites of a rich burger. Pickles, slaw and kimchi each do that job differently.

  • Pickles are crisp and sharp from vinegar. On our menu, pickled cucumber goes on the Cheese Burger with ketchup-mustard and cheese sauce.
  • Slaw is crunchy and creamy, with a dressing that softens the sharpness. Our Kimchi Slaw is a house-made kimchi corn slaw, described as creamy, crunchy and a little spicy. It's ordered as a side.
  • Kimchi is made from fermented vegetables, most famously napa cabbage, and is usually seasoned with chili and garlic. Its sourness comes from fermentation, and the seasoning adds savoriness and often some heat.

How the Kimchi Bulgogi Burger uses it

This burger starts from the same base as our Bulgogi Burger: savory bulgogi sauce. The kimchi adds tang and crunch that cut through the richness of the sauce and meat. You still get bulgogi flavor, with a sharper finish.

That makes it the Korean burger to try if you're a pickle person, or if a sweet-savory sauce on its own sounds a little rich. The listing calls the kimchi zesty and tangy and doesn't describe it as hot. It's listed at $13.99, or $18.99 as a combo.

Adding kimchi on the side

Kimchi Slaw ($4.50)

The slaw suits burgers that don't already have a sharp topping, like the Bulgogi Burger or either chicken burger. It's described as a little spicy, so expect some warmth along with the crunch.

Crazy Spicy Kimchi ($5.99)

In Korean this is 실비김치 (silbi kimchi), and it sits at the other end of the scale. It's fiery, deeply savory and extra-spicy, served as an 8 oz side. Order it if you want heat you control a forkful at a time, or a side the table can share.

New to kimchi? Start with the burger before the sides. Prices are as listed, and the menu has current availability. Our Bulgogi Burger and Cheese Burger comparison compares the savory bulgogi sauce this burger starts from with the Cheese Burger's ketchup-mustard and cheese sauce.
